...pumpkin muffins...

My family loves pumpkin. It is my husband's favorite flavor and he would gladly eat it all year round. Gabe loves it as well, and will eat it by the spoonful. We made these muffins yesterday. They had a really light texture and weren't too sweet. I had intended to take a picture with several muffins. This lone fellow is all that is left.

Pumpkin muffins (makes 12).
1 3/4 cup flour
3/4 cup white sugar
1/4 cup brown sugar
1 teaspoon baking soda
2 teaspoons cinnamon 
1/4 teaspoon ground cloves
1/4 teaspoon nutmeg
2 eggs
15 ounces pure pumpkin puree (canned)
1/2 cup partially melted butter
2 teaspoons vanilla

Preheat oven to 375. Line muffin tin with paper liners (red, his favorite color). Mix dry ingredients in a bowl. Add wet ingredients and mix until just blended. Scoop batter into each well. Bake muffins for 20-25 minutes or until an inserted toothpick comes out clean.
