..St. Valentines and the best sugar cookie ever...9:00 PM
I have missed this space. We had a few crazy weeks. We traveled to the company party one weekend and then left midweek for a CO wedding. Little did we know it, God had other plans. We missed the wedding and spent nearly 2 weeks in PICU....a trip for the books. More on that later.
I have been struggling to catch up and this was the first thing to go. I was excited about a few Feast days this month. However, they haven't happened.
We did watch this quick little Youtube video on the life of Saint Valentine. Cute and not scary for the three and under crowd.
I was off a few days and was convinced Valentines day was Monday or Tuesday. We had planned to make some treats for Steve's office, complete with sugar cookies. I had yet to find the recipe. Most of my searches have resembled: best sugar cookie, amazing sugar cookie....And stumbled upon a real gem. I do believe these are the best I have ever eaten.
I felt like a super under achiever. No sweet little candies, no special breakfast. My sister's mother-in-law (sweetly) sent a post-hospital care package and it contained a few little candy goodies. We were on sheer survival mode. But these cookies were fantastic! My kids didn't care.
The BEST sugar cookie:
1 1/2 cup salted butter
1 1/2 cup sugar
1 1/2 t vanilla
3 1/2 cups flour
1 t baking powder
1/2 t salt
Cream butter and sugar. Add eggs and vanilla. Mix dry ingredients (separate bowl) and add to egg mixture until dough begins to form. Wrap in plastic wrap and chill for a few hours. Snow banks work really well. Roll out with a generous amount of flour until 1/4". Cut. Bake at 350 for 10-12 minutes, just starting to brown. Frost. I haven't found the perfect frosting yet. We tried a cream cheese one that had the consistency of royal frosting. I am trying to find what my grade school teacher made. Nothing will beat her's.
